A Manchester tart is a traditional English baked tart, a variation on the custard tart. It consists of a shortcrust pastry shell which is filled with a thin layer of raspberry jam and then a thick layer of custard filling, and is traditionally topped with coconut flakes and a Maraschino cherry.

These tarts come in all sizes, from bite-sized to a full-sized pie, and have some variation in toppings. Coconut flakes are standard, but the cherry may be replaced or augmented with raspberries or left off altogether. Some recipes call for sliced bananas to be added into the custard, or to use lemon custard.
